For the first time in what feels like ages – seriously, almost two years – my breakfast wasn’t a smoothie or yogurt. Perhaps it’s the sudden drop in temperatures, making me crave something warm and comforting. Or, more realistically, it might be the gentle nudge from an empty fridge, prompting me to get creative before my next grocery run for yogurt and soymilk!

This delightful morning meal was a simple yet satisfying bowl of oats. I combined 1/3 cup of rolled oats with 2/3 cup of water and, for an added protein boost, stirred in 1 egg white before microwaving it to perfection. To sweeten it naturally, I used two packets of stevia. The magic truly happened with the toppings: a generous half banana, sliced and arranged beautifully, a creamy 1/2 tablespoon of almond butter for healthy fats, and a sprinkle of delicious cookie crumbles. These little gems were from the fantastic cookies that Brittany graciously shared with me on Sunday! And much like Steph’s legendary sugar cookies, these seasoned oyster crackers are utterly addictive. What started as a simple snack for tonight’s Christmas party quickly escalated into my primary evening meal, thanks to my enthusiastic “sampling” which got a little out of control!

Not only are they incredibly tasty, but did I mention this is perhaps the easiest party snack ever to prepare? With minimal effort and common pantry staples, you can whip up a batch of these savory delights that will disappear faster than you can say “holiday cheer.” They’re perfect for any gathering, a game night, or simply for satisfying a sudden craving for something crunchy and flavorful. The simplicity of this recipe makes it a go-to for busy hosts or anyone looking for a quick and impressive appetizer that requires no culinary expertise.

Recipe: Perfectly Seasoned Oyster Crackers

This recipe is an absolute winner for its ease and incredible flavor. You’ll find yourself making it again and again.

  • 1 package Ranch dressing mix (1 oz) – This provides a fantastic savory base.

To round off my day, I enjoyed a comforting and surprisingly delicious evening snack. Yesterday, I took the time to slice up some butternut squash, transforming it into what I affectionately call “squash fries.” I then indulged in them with a generous “mountain” of ketchup. No joke, I have a serious love for ketchup, and while I’m well aware that those squash fries might not win any beauty contests in this picture, let me assure you, their taste is absolutely amazing!

Butternut squash is a nutritional powerhouse, packed with vitamins A and C, fiber, and various antioxidants. Roasting or baking it into “fries” is a fantastic way to enjoy its natural sweetness and hearty texture. It’s a wonderful, healthier alternative to traditional potato fries and a great way to incorporate more vegetables into your diet. These squash fries were simply seasoned and baked until tender on the inside and slightly caramelized on the outside. Despite their humble appearance, they offer a deeply satisfying and wholesome experience. The best part? I still have half a squash leftover from my meal prep, which means these delightful, albeit “gross-looking” (to some!), squash fries will definitely be reappearing at dinner soon. It’s always a win when you can create a delicious meal and have healthy leftovers ready to go for the next day, making meal planning effortless and enjoyable.
