My Monday dinner perfectly illustrated this philosophy, kicking off with a delightful and somewhat humorous exchange that has stayed with me.
After immersing ourselves in a three-hour “Monk” marathon on Netflix – a truly captivating way to spend an afternoon – my partner, affectionately known as the “man-friend,” found himself quite hungry. He suggested a quick trip to Subway, a place I genuinely appreciate for its fresh, customizable options that fit perfectly into my “feel-good-about-this-meal” category. However, on our way, he surprised me with an additional proposition: “Let’s also get milkshakes!”
My initial reaction was a familiar internal debate. I instinctively whined a little, “Oh, but I had Mexican food for lunch; a milkshake with dinner might be pushing it.” It was that ingrained voice of self-restriction, the one many of us often hear when contemplating a treat.

I opted for a massive, vibrant dish of vegetarian fajitas, and it was everything I hoped for and more. The sizzling platter arrived laden with a colorful medley of perfectly seasoned bell peppers, onions, mushrooms, and other garden-fresh vegetables. It was so generously portioned, in fact, that I happily packed up the remainder for a delicious and convenient lunch on Tuesday. There’s something incredibly satisfying about a plate piled high with fresh, crisp veggies, and these fajitas delivered on all fronts. While I skipped the tortillas to keep it lighter, I thoroughly enjoyed incorporating the savory beans and fluffy rice that accompanied the dish, adding a hearty and traditional touch to my meal.
Now, here’s where I must confess my eternal struggle as a food blogger: despite my best intentions, I sometimes completely fail at the “food photography” aspect. There’s something uniquely comforting about building your own meal, selecting exactly what you want, knowing it’s going to be fresh and flavorful.

The combination of crisp veggies and that tangy-sweet sauce creates an incredible symphony of flavors and textures. That essentially sums up my Monday’s culinary journey. I do, however, wish I could have shared snapshots from yesterday’s dinner as well. I had the unique opportunity to attend a Japanese steakhouse for a work event, and the experience was truly memorable. The chefs performing tableside, the sizzling sounds, the incredible aromas – it was a feast for all senses. I desperately wanted to whip out my camera and capture the artistry and deliciousness unfolding before me, but alas, it wasn’t the best scenario to play food paparazzi. There are times when it’s more important to be present, engage with colleagues, and simply savor the moment, even if it means sacrificing the perfect blog photo. Sometimes, the best memories are the ones we experience fully, without the lens of a camera.
