This particular week felt extra special and motivating, thanks to a visit from my wonderful friend, Alexa. This breakfast staple is a favorite for good reason: it’s packed with healthy monounsaturated fats from the avocado, providing sustained energy and satiety. Our rendition was simple yet incredibly flavorful. We mashed fresh avocado with a squeeze of zesty lime juice, a pinch of sea salt, and a dash of freshly ground black pepper. However, the lengthy wait time prompted a spontaneous change of plans, leading us to Burger Bach, another local favorite. It’s always amusing, and perhaps a little ironic, when you choose a burger joint only to end up ordering salads! But this perfectly illustrates the flexibility and realistic approach often encouraged in wellness plans like Tone It Up. We focused on making smart choices, opting for hearty salads packed with fresh greens, vegetables, and lean protein. This allowed us to enjoy the social aspect of dining out without derailing our healthy eating goals. Of course, some indulgences are simply too good to resist, and Burger Bach’s french fries fall squarely into that category. We decided to share a small order, a perfectly balanced treat that satisfied our craving without overdoing it. It’s a testament to the idea that healthy eating isn’t about rigid restriction, but rather mindful choices and enjoying life’s little pleasures in moderation.

As the afternoon transitioned into evening, we took a delightful break from our work to prepare dinner. The perfect accompaniment to our culinary endeavors? A refreshing batch of homemade sangria. This was no ordinary sangria; it was crafted with love and creativity, much like this sparkling sangria recipe that inspired us. What made it even more special was using up some extra fruit we had on hand from an earlier photo shoot. This simple act of resourcefulness turned into a delicious, vibrant beverage. Making sangria at home allows for complete control over the ingredients, particularly the sugar content, aligning perfectly with a clean eating approach. Sipping on this fruity concoction made the dinner preparation feel like a mini celebration, especially with the festive spirit of Cinco De Mayo in the air.

Given that it was Cinco De Mayo, it was practically a culinary imperative that we make tacos for dinner. But in true “lean, clean, and green” fashion, we put a healthy and incredibly delicious spin on this classic. Our star ingredient was cauliflower, which we chopped into florets and tossed with a flavorful blend of buffalo sauce, garlic powder, and chili powder. Roasting the cauliflower transformed it into tender, slightly caramelized bites with a satisfying chew, absorbing all those incredible flavors. Instead of traditional tortillas, we opted for crisp lettuce “shells,” creating light and refreshing wraps that kept the meal low-carb and packed with greens. We then loaded these vibrant wraps with the roasted buffalo cauliflower, fresh salsa for a burst of tang, fragrant cilantro, crunchy shredded cabbage for added texture, and a generous drizzle of a creamy, dreamy avocado yogurt sauce. Seriously, these tacos were beyond good. They were so flavorful, satisfying, and wholesome that I could happily eat them over and over again. Alexa, ever adventurous, chose the lemon cake flavor, which proved to be equally delicious and refreshingly bright. We settled in for the rest of the evening, enjoying our individual tubs of ice cream while splitting our attention between half-watching TV and half-diving back into more photo projects. It was the perfect ending to a day filled with delicious, healthy meals and productive, creative work. All in all, our day was a resounding success – a testament to the joy and ease of embracing a vibrant, nourishing lifestyle.
