A truly hands-on experience, we even had the unique opportunity to taste various grains in their raw form, understanding the subtle differences that contribute to a beer’s final profile.
Beyond the ingredients, the seminar delved into the intricacies of alcohol content and the fascinating etymology behind iconic beer styles. For instance, we discovered the intriguing origin of the Pilsner, a ubiquitous lager named after the city of Pilsen in Bohemia, now part of the Czech Republic. We had the pleasure of sampling three distinct wines: the elegant Chardonnay Reserve, the complex Meritage, and the intriguing White Norton. The White Norton quickly emerged as my personal favorite, distinguished by its sweet, light, and refreshing character. Before this tasting, I was unfamiliar with the Norton grape, and it was particularly engaging to learn about its local roots, having been first cultivated right there in Richmond. This connection to regional history added another layer of appreciation to the wine, showcasing Virginia’s burgeoning viticultural landscape.
Following the wine tasting, our palates transitioned to an equally impressive cheese selection. We were introduced to a truly exceptional cheesemonger from Carr Valley Cheese, who had traveled all the way from Wisconsin. Her passion and expertise were immediately apparent, and she shared fascinating insights into the world of artisanal cheese. It was particularly interesting to learn that Wisconsin is the only U.S. state that legally mandates a licensed cheesemaker for any company producing cheese – a testament to their unwavering commitment to quality and tradition. It’s no wonder Wisconsin is often lauded for producing some of the finest cheeses in the nation.
The cheese selection was diverse and exquisite, featuring a couple of pungent blue cheeses, a sharp white cheddar, and two classic regular cheddars. The absolute highlight was a magnificent 10-year aged cheddar, whose depth of flavor and crumbly texture were nothing short of amazing. The seminar concluded on a sweet note with homemade white chocolate truffles, masterfully crafted by Pastry Chef Rodney Diehl. By this point, the combination of fine wines, exceptional cheeses, and decadent sweets left me feeling wonderfully content and utterly spoiled.

As evening approached, we prepared for the grand culmination of our day: a fabulous 6-course dinner at the prestigious Williamsburg Inn. I was especially grateful for the Inn’s incredible accommodating nature, as they thoughtfully prepared a delicious vegetarian dish for me with each course, despite much of the menu featuring meat. This attention to detail truly elevated the dining experience, making me feel valued and well-catered to.
The lighting in the dining room was, as expected for such a refined establishment, quite dim, creating an intimate and sophisticated atmosphere. However, I managed to capture a few photographs of each artfully presented course, eager to preserve the memory of this remarkable meal. The theme of the dinner, “A Taste of the Decades,” was truly captivating, featuring recipes that spanned many generations, proving their enduring appeal and classic status.
From the top, our exquisite 6-course journey unfolded: The evening began with a beautifully designed menu, followed by a sparkling rosé, which served as a delightful palate cleanser. Next, a vegetarian rendition of the classic lobster bisque was presented, rich and flavorful, perfectly mimicking the original without compromising on taste. This was followed by a refreshing salad adorned with tender artichokes and delicate palm hearts, offering a burst of freshness. A pear Riesling sorbet provided an elegant intermezzo, cleansing the palate with its crisp, fruity notes before the main course. The depth of knowledge shared regarding the intricate processes of beer, wine, cheese, and the broader context of food culture was absolutely incredible. Their dedication transformed each seminar and meal into an engaging educational journey, where we were swept away by their genuine love for what they do.
