These vegan peach muffins are incredibly easy to make and boast a perfectly balanced sweetness! Indulge in these delightful muffins for a comforting breakfast, a quick grab-and-go snack, or even a light dessert. They are a true celebration of summer’s bounty.


Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 6 tablespoons ground flaxseed
  • 3/4 teaspoon salt
  • 1 cup unsweetened almond milk
  • 1 cup + 1 tablespoon firmly packed light brown sugar (divided)
  • 1/3 cup avocado oil
  • 1 1/2 teaspoon vanilla extract
  • 1 large peach, diced

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with parchment paper liners or grease well.
  2. In a large bowl, combine flour, one cup of light brown sugar, baking powder, ground flaxseed, and salt. Stir well to distribute evenly.
  3. In a separate measuring cup, combine unsweetened almond milk, avocado oil, and vanilla extract.
  4. Pour the liquid ingredients into the dry mixture. Stir gently with a spatula until just combined. Do not overmix; lumps are fine.
  5. Add the diced peach. Stir just to distribute them evenly throughout the batter.
  6. Divide the batter evenly into the 12 prepared muffin cups.
  7. Sprinkle the remaining tablespoon of brown sugar evenly over the tops of the batter in each cup.
  8. Bake for 20-23 minutes, or until golden brown and a skewer inserted into the center comes out clean.
  9. Allow to cool in the muffin pan for at least 5 minutes before transferring to a wire rack to cool completely.
