My Sunday Eats

Sunday wasn’t just another day on the calendar; it was a masterclass in living well, a perfect blend of nourishing food, invigorating movement, and spontaneous exploration. For me, a day that seamlessly weaves together delightful culinary experiences with ample opportunities for walking is, without a doubt, the ideal definition of a perfect day. It’s a blueprint for holistic well-being, where every step and every bite contributes to a sense of contentment and vitality. This particular Sunday unfolded in a way that truly captured the essence of a cherished weekend, offering a refreshing reset before the demands of the week ahead. It was a day to savor the simple pleasures, embrace curiosity, and reconnect with both myself and my surroundings.

Our morning began with a cherished and comforting routine, a ritual that anchors the start of any relaxing weekend. The soothing aroma of freshly brewed coffee filled the kitchen, a signal for the day to gently awaken. We settled into our usual spots, coffee mugs in hand, enjoying a leisurely breakfast while flipping through the pages of the newspaper. This quiet, unhurried start allows for reflection and sets a calm tone for the hours to come. My breakfast, a vibrant and wholesome bowl of creamy Greek yogurt, was adorned with a generous sprinkle of fresh blueberries and crunchy granola, providing a delightful texture contrast and a burst of antioxidants. And, of course, no weekend morning is complete without multiple cups of coffee, fueling both the body and the mind for the adventures that lay ahead.

Typically, my Sundays include a gymnastics session around lunchtime, a fantastic way to energize the body. However, on this particular morning, a delightful realization dawned upon me: we had an entirely open day stretching before us. Such unscheduled freedom is a rare and precious commodity in our busy lives, and I knew we had to seize the opportunity. Therefore, I might have, with considerable enthusiasm, insisted that we embark on an adventure. While I prefer to think of it as a passionate request, I concede it might have come across as a gentle demand! The sun was gloriously shining, inspiring my initial thought of a leisurely picnic in a picturesque park. However, as often happens with spontaneous plans, our trajectory shifted, and we found ourselves drawn to the historic charm of Church Hill in Richmond.

Church Hill, with its cobblestone streets and stunning city views, felt like the perfect backdrop for our unplanned excursion. Our hunger led us to Union Market, a local gem known for its inviting atmosphere and delicious offerings. We were fortunate enough to snag a table on their charming patio, allowing us to soak in the vibrant neighborhood ambiance while enjoying our meal al fresco. For lunch, I indulged in an incredibly satisfying pesto grilled cheese sandwich, its savory flavors perfectly complemented by a fresh and vibrant kale Caesar salad. What made the salad truly stand out was their innovative dressing – a delightful vegan creation made with tofu, which meant absolutely no anchovies! It was a flavorful and refreshing twist on a classic, highlighting the market’s commitment to thoughtful and delicious vegetarian options. This unexpected lunch spot truly elevated our spontaneous adventure, transforming a simple meal into a memorable culinary experience.

To accompany my lunch, I discovered a real treat: a glass of ginger Barefoot Kombucha on tap. Finding kombucha on tap is a rare delight, and I simply couldn’t resist. The crisp, effervescent drink, with its distinct ginger kick, offered a wonderfully spicy and invigorating counterpoint to the rich grilled cheese. It was the perfect refreshing beverage to enhance our patio dining experience. After our delicious meal, we decided to fully immerse ourselves in the charm of Church Hill, embarking on a leisurely stroll through its historic streets. This particular walk was made even more engaging by a recent addition to my life: a pedometer, a thoughtful gift from Alex last week. I’ve become absolutely fascinated, and perhaps a little obsessed, with tracking my steps. There’s something incredibly motivating about seeing those numbers climb, pushing me to explore further and embrace every opportunity for movement. The quaint architecture, the blooming gardens, and the panoramic views from Libby Hill Park all contributed to a delightful afternoon of exploration. I’ll share my impressive step count for the entire day later on – you won’t want to miss it!

Upon returning home after our extended walk through Church Hill, a rather unusual craving struck me: the desire for a nap. This was quite out of character, as I am famously not a nap-taker. Yet, the idea of a brief respite, a moment of stillness, sounded utterly divine after a morning filled with activity. The allure of sinking into the sofa for a quick power nap was simply too strong to resist. We succumbed to the temptation and ended up napping for a glorious 45 minutes. And oh, it was magnificent! The feeling of waking up refreshed and recharged, even from such a short nap, was an revelation. I suddenly understood the universal appeal of napping and why so many people swear by its rejuvenating powers. It truly reset my energy levels and prepared me for the rest of the day.

With renewed energy, we prepared to head out for church. Still riding the wave of my newfound pedometer obsession, I successfully convinced Alex that walking to church would be an excellent idea. The church isn’t exactly around the corner; it’s nearly 1.5 miles each way, making for a substantial hike. This meant we covered a considerable distance, adding significantly to our daily step count. The motivation provided by tracking my steps was undeniable, transforming a routine trip into another mini-adventure. We found ourselves walking at a surprisingly brisk pace, a slight scramble to ensure we weren’t late for the service. A minor oops moment, perhaps, but it added a touch of urgency and made the journey even more dynamic. The brisk walk in the fresh air, with the pedometer silently ticking up the numbers, felt incredibly invigorating and further cemented my appreciation for an active lifestyle.

Once we arrived back home, the evening shifted into a more culinary gear. I dedicated some time to one of my favorite creative outlets: recipe testing. The kitchen transformed into a laboratory of flavors and textures, with measuring cups and mixing bowls spread across the counter. There’s a particular satisfaction in experimenting with ingredients and seeing a new dish come to life. This session was particularly fruitful, leading to the development of a recipe that I was eager to share. This creative process is not just about cooking; it’s about developing new ideas, perfecting techniques, and ultimately creating something delicious to share. It’s a truly rewarding part of my week.

The delicious outcome of my recipe testing earlier that evening was none other than the single serving banana bread recipe, which I was thrilled to share on the blog just a couple of days later. Of course, I had to sample a portion of my creation, a sweet and satisfying treat after all the day’s activity. For dinner, I opted for something simple yet comforting: a small bowl of whole wheat pasta. Keeping it light and flavorful, I tossed the pasta with a generous drizzle of olive oil, freshly minced garlic, a pinch of salt, and a medley of my favorite spices. There are times when this minimalist approach to pasta is exactly what the soul craves – pure, unadorned comfort food. My original plan was to incorporate some refreshing greens by preparing a quick cucumber salad. Unfortunately, to my dismay, when I reached for the cucumber, I discovered it had gone bad. Such a bummer when your fresh produce plans are thwarted!

As the evening progressed, Alex was eagerly looking forward to watching the Wisconsin game. I joined him for part of the game, although I must admit my attention was somewhat divided as I found myself happily browsing Pinterest for inspiration and ideas. This relaxed multi-tasking felt like a perfect way to wind down. During halftime, Alex, ever thoughtful, suggested a little outing that I couldn’t resist: a trip to Sweet Frog for some frozen yogurt. It was the ideal spontaneous treat to cap off an already wonderful day. The anticipation of building my own custom frozen yogurt masterpiece added an extra layer of joy to the evening. There’s something undeniably fun about choosing your base and then meticulously selecting your favorite toppings.

My frozen yogurt creation was a symphony of flavors and textures, though the picture only captures a glimpse of its deliciousness. It featured a rich blend of cookies & cream and cake batter frozen yogurt, piled high with miniature chocolate chips, fresh strawberries, and a generous sprinkle of shredded coconut. Each spoonful was a delightful explosion of sweetness and crunch – truly delicious and a perfectly satisfying way to conclude a day packed with activity. Reflecting on the day, I realized I had eaten quite a bit of wonderful food, but my pedometer told an even more impressive story: I had clocked in well over 15,000 steps! This is a significantly higher step count than I typically manage during a busy weekday, making me incredibly grateful for the opportunity to get out, explore, and simply enjoy the fresh air and invigorating movement. It truly was a perfect balance of indulgence and activity, leaving me feeling refreshed, fulfilled, and ready for the week ahead.
