Of course, there’s a delicate balance; push too far, and the line between productive and overwhelmed blurs, a phenomenon my wonderful partner, Alex, is quick to help me recalibrate. But this particular week has fallen squarely into the ‘good busy’ category.

A significant part of this vibrant energy stemmed from having my parents in town. Their visits are always a cherished opportunity to reconnect, share stories, and simply enjoy their company. Coupled with a demanding yet rewarding work schedule, the days have truly flown by, each moment feeling full and purposeful. For anyone who hasn’t discovered the magic of keeping bread in the freezer, it’s an absolute game-changer for preventing waste and ensuring you always have a base for a quick meal. A quick toast, and it’s as fresh as the day it was baked.

On my toast, I spread a generous dollop of Kerrygold butter. The rich, creamy texture and distinct flavor of this butter elevate even the most basic piece of toast into a truly satisfying experience. Its golden hue promises quality, and it never disappoints. Alongside this classic comfort, I enjoyed a side of frozen mango chunks. While the combination of toast and mango might seem unconventional at first glance, it harks back to a beloved phase a couple of years ago when this pairing was my absolute go-to, eaten on repeat for months. Dinner was a special occasion, as my parents joined Alex and me at one of our absolute favorite local establishments: Stuzzi. This place holds a special spot in our hearts; Alex and I used to have a standing Monday night date here, a comforting routine that, admittedly, has been disrupted lately due to our recent busy schedules. Bringing my parents, who had never experienced Stuzzi’s charm, made the evening even more delightful, introducing them to a piece of our culinary world.

The joy of savoring every bite of such a perfectly crafted dish, especially in the company of loved ones, is one of life’s purest pleasures. It was a wonderful opportunity to slow down, share stories, and create new memories around a table laden with exceptional food.

After a thoroughly satisfying meal at Stuzzi, we returned home for a relaxing end to a full day. The evening unfolded with the simple, profound pleasure of chatting on the porch with my parents.
