While my plate may skip the turkey, I’m absolutely focused on indulging in all the other incredible dishes – and let’s be honest, the side dishes are truly the stars of the show! Bring on the potatoes, the casseroles, and all the comforting flavors of fall. This year, I’m particularly excited to make this vibrant wild rice & butternut squash dish. But before we dive headfirst into holiday feasting, I wanted to share a snapshot of a typical healthy eating day. In the spirit of the popular What I Ate Wednesday series, I’m taking you through all my Monday eats. It’s a great way to inspire balanced choices and show that healthy eating can be both delicious and satisfying. Ready to explore a day of wholesome, plant-forward meals?
Kicking Off the Day Right: Breakfast Fuel
I believe a great day starts with a nourishing breakfast, and this one certainly hit the spot. On Sunday, I dedicated some time to making a fresh batch of grain-free granola. There’s something incredibly satisfying about homemade granola – you control the ingredients, the sweetness, and the crunch! I generously topped a bowl of creamy yogurt with this delicious granola and a handful of sweet, juicy strawberries. The combination of textures and flavors was simply divine, making it the perfect start to my busy day. For those with dietary restrictions or just looking to reduce grains, homemade grain-free granola is a fantastic option, often made with a mix of nuts, seeds, and natural sweeteners. It’s packed with healthy fats and fiber, keeping you full and energized for longer. I absolutely can’t wait to share the recipe with you all soon, so be sure to stay tuned!
Smart Snacking: Nurturing Your Energy Throughout the Day
Having enjoyed a pretty early breakfast, it was no surprise that my stomach started rumbling around 11 AM. While lunch was just around the corner, waiting until I was ravenous was not an option. That’s a surefire way to overeat later! Instead, I reached for a smart and convenient snack: one of these pre-portioned 100-calorie packs of almonds.
These small packs serve as an excellent reminder of how tiny a true serving of almonds really is! It’s so easy to mindlessly snack on a large bag, but these little portions help reinforce mindful eating habits. Luckily, this handful of nutrient-dense almonds was just enough to curb my hunger and prevent me from reaching that “hangry” state. This small, strategic snack made a huge difference, ensuring I wasn’t utterly famished by lunchtime. If I arrive at the salad bar feeling ravenous, my typical strategy goes out the window, and I often end up piling my plate with far too much food, leading to an afternoon slump. Planning small, healthy snacks is key to maintaining stable energy levels and making smart choices at main meals.
Lunchtime Delights: A Vibrant Salad Experience
For lunch, I met up with a friend and opted for a quick, wholesome meal from the cafeteria. My go-to is always a customizable salad, which allows me to pack in as many nutrient-dense ingredients as possible. This particular bowl was overflowing with a fantastic array of fresh veggies and hearty beans, providing a wonderful source of fiber and plant-based protein. To elevate the flavors, I added a generous heap of vibrant pico de gallo, which offered a fresh and zesty kick. And because life is too short to skip delicious additions, I couldn’t resist a sprinkle of fried jalapeños. They add an incredible burst of flavor and a satisfying crunch that makes any salad feel like a treat! Building a balanced salad like this ensures I get a wide spectrum of vitamins and minerals, keeps me full, and is a fantastic way to enjoy a delicious meal even when eating out or in a cafeteria setting.
Effortless Evenings: The Magic of Meal Prep & Crockpot Cooking
I had initially packed some additional snacks for the afternoon, but that substantial and nutrient-packed salad kept me surprisingly full and energized. On my way home, I made a quick stop for some errands and a bit of shopping. By the time I walked through the door, I was incredibly grateful that dinner was already taken care of, bubbling away in the crockpot. The magic of slow cooking never ceases to amaze me – it truly transforms busy evenings into stress-free mealtimes.
Dinner that evening was a comforting bowl of slow cooker lentil soup. While this particular recipe didn’t quite capture my heart enough to share, it certainly did its job of filling us up with warmth and goodness. It served as a great reminder that not every recipe is a showstopper, and that’s perfectly okay! What matters is nourishing your body with wholesome ingredients. I often find myself not cooking lentils as frequently as I should, which is a shame considering how truly amazing they are. Lentils are not only incredibly delicious but also a powerhouse of nutrition. They are absolutely packed with plant-based protein and dietary fiber, making them an excellent choice for maintaining satiety and supporting digestive health. Furthermore, lentils are remarkably affordable, making them a budget-friendly staple for healthy eating. They are incredibly versatile, perfect for soups, stews, salads, or even as a meat substitute in various dishes. This experience definitely motivated me to incorporate them more regularly into my meal planning.
Winding Down: Comfort, Calm, and a Sweet Treat
After a satisfying dinner, it was time to unwind and transition into a more relaxed evening routine. I spent some time playing the piano, a wonderfully calming activity that helps clear my mind. There’s nothing quite like the soothing sounds of music to de-stress after a long day. Following that, I settled in with a warm cup of peppermint tea. Peppermint tea is not only refreshing but also known for its calming properties, making it the perfect beverage for a chilly evening and a lovely ritual as winter approaches. It truly embodies the perfect winter activity – cozy and comforting. Later in the evening, Alex and I enjoyed catching up on a couple of episodes of “30 Rock,” one of our go-to feel-good shows.
Naturally, while enjoying our show, the craving for a little something sweet made an appearance. And why not indulge mindfully after a day of healthy choices?
Luckily, we had a small container of delicious ice cream in the freezer, leftover from a previous culinary adventure – a delightful easy cookie dough ice cream pie. It was just the right amount to satisfy my sweet tooth without overdoing it. Enjoying a small scoop was the perfect treat to end the day on a sweet note, proving that healthy eating doesn’t mean sacrificing all your favorite indulgences. It’s all about balance and conscious enjoyment.
