Description

Ingredients

  • 1 head of broccoli, chopped into 1” pieces
  • 3 bell peppers, chopped into 1” pieces (any color)
  • 1/2 red onion, chopped into 1” pieces
  • 4 tablespoons olive oil, divided
  • 2 bags Success Jasmine Rice (or about 1 cup uncooked Jasmine rice)
  • 8 oz halloumi, sliced into 1/4″ thick slices
  • 1/2 cup fresh cilantro, packed
  • 1/4 teaspoon cumin
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Arrange the chopped broccoli, bell peppers, and red onion on a large baking sheet lined with parchment paper.
  3. Drizzle the vegetables with 1 tablespoon of olive oil and season generously with salt and black pepper. Toss to coat evenly.
  4. Bake for 15-20 minutes, or until the vegetables are tender-crisp and nicely browned with caramelized edges.
  5. While the vegetables are roasting, begin preparing the remaining ingredients.
  6. In a medium saucepan, bring 4 quarts of water to a rolling boil. Add 2 bags of Success Jasmine Rice and boil for 8-10 minutes, or until the rice is perfectly fluffy. Remove the bags from the pot, drain well, and set the cooked rice aside.
  7. While the rice cooks, prepare the halloumi. Heat a large non-stick skillet over medium-high heat. Lightly spray with olive oil or non-stick spray.
  8. Lay the 1/4-inch thick halloumi slices in a single layer in the hot skillet. Cook for about 3-4 minutes until golden brown and crispy on one side. Flip and cook for another 3-4 minutes until the second side is also golden brown and crispy. Remove from pan and set aside.
  9. To make the cilantro sauce, combine the remaining olive oil, fresh cilantro, cumin, red pepper flakes, and salt in a small food processor. Blend until the sauce is just slightly chunky, retaining some texture from the cilantro.
  10. To assemble the bowls, divide the fluffy jasmine rice evenly into 4 serving bowls. Top each with a generous portion of the roasted vegetables and several slices of crispy halloumi.
