There’s just something about the fresh flavors, the diverse textures, and the generally festive atmosphere of Mexican restaurants that makes them irresistible. As a vegetarian, I’m also particularly fond of Mexican cuisine because it almost always offers a generous array of delicious and satisfying meat-free options, making it a reliable choice for dining out.
So, when my friend G-love texted me Tuesday morning, proposing a Mexican food dinner, my immediate and enthusiastic response was an unequivocal “yes.” However, I knew that if I was going to fully indulge in the deliciousness of an evening out, I wanted to ensure my meals leading up to dinner were light, balanced, and packed with nutrients. This conscious decision allowed me to savor every bite of my dinner without any guilt, embracing a holistic approach to eating that balances health with enjoyment.
Breakfast: A Protein-Packed Start to My Day
Starting the day right is crucial for sustained energy and focus. Recently, I’ve been making a conscious effort to boost my protein intake, and my breakfast choice perfectly aligned with this goal. I prepared a thick, satisfying smoothie bowl featuring almond milk as the base, blended with a ripe banana for natural sweetness and creaminess. Even though I wouldn’t be home until close to 6 PM, I recognized the critical importance of having a strategic afternoon snack. Skipping this meal would inevitably lead to intense hunger, and I knew myself well enough to predict the outcome: I would literally dive face-first into the chip basket at the Mexican restaurant, negating all my earlier efforts to eat lightly. To prevent this pre-dinner temptation, I opted for a simple yet highly effective snack. I thinly sliced an apple using a mandolin slicer, which not only made the slices elegant but also enhanced the eating experience. I then sprinkled the apple slices with a generous amount of cinnamon and a handful of raw oats. This combination provided natural sweetness, a good dose of fiber to promote satiety, and a delightful textural contrast. Dinner was the highly anticipated Mexican feast at Su Casa, one of my absolute favorite local Mexican restaurants. Their vibrant atmosphere, friendly service, and consistently delicious food make it a top choice for a casual yet memorable meal. The experience was made even sweeter by a fantastic Groupon deal I had snagged earlier in the week – who doesn’t love a great discount on their favorite meal?
As expected, the moment we sat down, a generous basket of warm, crispy tortilla chips arrived, accompanied by their signature, perfectly spiced salsa. Despite my earlier resolve, it’s a battle I often lose, and I thoroughly enjoyed a fair share of this irresistible appetizer. For my main course, I chose their gigantic vegetarian burrito. This particular burrito is a masterpiece of simplicity and flavor, generously filled with savory refried beans, perfectly sautéed onions, and tender bell peppers. It’s a testament to how satisfying and delicious vegetarian options can be when crafted with care. The burrito was so substantial that I could only manage to eat about half of it, saving the other half for a delicious lunch the next day – a win-win situation!
