There is NO compromise on flavor and taste when it comes to these gluten-free brownies! Crackly top? Check. Chewy on the outside, yet soft on the inside? Done. Bites that are packed with chocolate flavor, and just the right amount of shredded coconut? You bet. These brownies are simple to make and promise a truly indulgent experience.


Ingredients

  • 1/2 cup peanut butter
  • 3/4 cup coconut sugar
  • 8 ounces semisweet chocolate chips
  • 1 egg, room temperature
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 teaspoon Kosher salt
  • 1/2 cup shredded unsweetened coconut, to sprinkle on top

Instructions

  1. Preheat oven to 350° F (175° C). Line an 8×8-inch square pan with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment paper with nonstick spray (coconut oil spray works wonderfully here).
  2. Place chocolate chips in a large, microwave-safe bowl. Microwave for 1 minute, then stir with a rubber spatula. Continue heating in 30-second to 1-minute intervals, stirring after each, until the chocolate is completely melted and smooth. Be careful not to overheat.
  3. Using the same rubber spatula, mix the peanut butter, cocoa powder, and coconut sugar into the melted chocolate. Stir until the mixture is smooth and well combined.
