Irresistibly Decadent Double Chocolate Zucchini Muffins & Donuts: A Sweet Twist on Healthy Baking

The versatility of zucchini continues to amaze me, especially during peak harvest season. While I’ve always enjoyed incorporating this humble squash into savory dishes like zucchini pasta, flavorful zucchini pizza boats, and crispy oven-baked zucchini fries, I recently embarked on a culinary adventure to explore its sweet side. Faced with another evening of zucchini-centric dinner, I decided it was time to innovate and surprise my family with something truly unexpected. The result? These unbelievably delicious double chocolate zucchini muffins and donuts, brimming with rich cocoa and gooey chocolate chips, making them the ultimate stealthy way to enjoy your vegetables.

What makes these treats truly special is their ability to completely mask the presence of zucchini. Even the pickiest eaters will be none the wiser! I’ve personally witnessed the magic unfold with my 9-year-old foster son, who, like many children, has an unwavering love for all things chocolate. These muffins have become our secret weapon, affectionately dubbed “cupcakes” to ensure they’re devoured with enthusiasm and considered a delightful dessert. For those seeking a lower-carb alternative without sacrificing flavor, I highly recommend exploring my almond flour zucchini bread recipe, which offers a similar delicious experience.

Achieving Perfection: Essential Tips for Your Chocolate Zucchini Creations

Crafting the perfect double chocolate zucchini muffins or donuts is straightforward, but a few key techniques can elevate your baking from good to extraordinary. Follow these simple tips to ensure your treats come out moist, perfectly textured, and utterly delicious every time.

  • Separate Mixing of Ingredients: To achieve a light and airy texture without overworking the gluten in the flour, it’s crucial to mix your dry and wet ingredients separately before combining them. This method ensures that all components are thoroughly incorporated, leading to a consistent batter and evenly baked muffins or donuts. Overmixing can result in tough, dense baked goods, so stir only until just combined.
  • Squeeze Out Excess Zucchini Water: Zucchini, like many squash varieties, contains a significant amount of water. Failing to remove this excess moisture can lead to a soggy texture in your muffins or donuts, rather than the desirable fudgy and tender crumb. A quick squeeze in a clean kitchen towel or sturdy paper towel will prevent this common baking pitfall and guarantee a superior end product.
  • Proper Cooling is Key: While the aroma of freshly baked chocolate delights can be incredibly tempting, patience during the cooling process is paramount. After removing your muffins or donuts from the oven, allow them to cool in the pan for just a couple of minutes before carefully transferring them to a wire rack. Cooling on a wire rack allows air to circulate around all sides, preventing condensation and keeping the bottoms from becoming soggy.

Mastering the Art of Shredding and Measuring Zucchini

Accurate measurement of shredded zucchini is essential for the success of this recipe. The following steps will guide you through preparing your zucchini perfectly, ensuring the right balance of moisture and texture in your double chocolate treats.

Begin by thoroughly washing your zucchini. Once clean, trim off both ends. Using a large box grater, carefully shred the zucchini. The larger holes on the grater are ideal for creating the right texture for baking.

Once you’ve grated enough zucchini, gather it into a clean kitchen towel or several layers of strong paper towel. This is a critical step to prevent your baked goods from becoming watery. Vigorously squeeze the bundle to extract as much excess liquid as possible. You’ll be surprised by how much water comes out! This process not only prevents sogginess but also concentrates the zucchini’s natural flavors, subtly enhancing the overall taste and texture of your muffins or donuts.

After squeezing out the moisture, transfer the shredded zucchini to a 1-cup measuring cup. Gently pack it down until the cup is full. For this recipe, one firmly packed cup of de-watered zucchini is precisely what you’ll need. Remember, there’s no need to peel the zucchini; the skin adds nutrients and a touch of color without affecting the taste or texture.

Muffins vs. Donuts: Your Choice of Chocolate Zucchini Indulgence

This versatile double chocolate zucchini recipe provides the flexibility to create either classic muffins or delightful donuts, depending on your preference and available bakeware. Both options yield incredibly moist and flavorful results, making them perfect for breakfast, a snack, or even a guilt-free dessert. If you opt for donuts, a donut pan is essential. Baked donuts offer a healthier alternative to their fried counterparts while still providing that satisfying donut shape and texture. Muffins, on the other hand, are the go-to for a quick, grab-and-go treat.

Description

These double chocolate zucchini muffins or donuts are the perfect way to use up your leftover squash! They’re super easy to make and filled with chocolate!

Ingredients

  • 1 medium zucchini (about 1 firmly packed cup of shredded zucchini)
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2/3 cup full fat plain Greek yogurt
  • 2 tablespoons coconut oil, melted
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin pan with muffin liners or lightly grease a donut pan with non-stick spray.
  2. Grate the zucchini using a medium-sized box grater.
  3. Once the zucchini is grated, place it in a thick paper towel or cheesecloth and squeeze firmly to remove excess water. You should have one firmly packed cup of squeezed zucchini.
  4. In a small bowl, combine the flour, cocoa powder, baking powder, and salt. Whisk briefly to combine, then set aside.
  5. In a large bowl, whisk together the granulated sugar, egg, vanilla extract, Greek yogurt, and melted coconut oil until well combined and smooth. Stir in the prepared shredded zucchini.
  6. Gradually add the dry flour mixture to the wet ingredients, along with the chocolate chips. Stir gently until just combined. Be careful not to overmix the batter; a few streaks of flour are acceptable to ensure tender muffins/donuts.
  7. For muffins: Scoop the batter evenly into the 12 prepared muffin cups. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. For donuts: Carefully spoon or pipe the batter into the prepared donut pan cavities. Bake for 12-15 minutes, or until a toothpick inserted comes out clean.
  8. This recipe typically yields 12 delicious muffins or 10 perfectly baked donuts.
  9. Optional Chocolate Glaze: If desired, melt 1/4 cup of chocolate chips with 1 tablespoon of coconut oil in a small microwave-safe bowl or over a double boiler. Stir until smooth. Dip the cooled donut tops or muffin crowns into the glaze for an extra layer of chocolatey indulgence.

Notes

I updated this recipe in June 2020 and highly recommend including the coconut oil for a more dense, fudgy, and moist texture. If you’re looking to keep these treats lower in fat, you can certainly omit the coconut oil if desired, though the texture might be slightly different.

After the delightful aroma fills your kitchen and your double chocolate zucchini muffins or donuts emerge from the oven, the most challenging part begins: letting them cool. It’s difficult to resist diving in immediately, especially when the chocolate chips are still perfectly melty and gooey. For an even more intense chocolate experience, I’m already planning to try this recipe with mini chocolate chips next time, ensuring an even distribution of chocolate in every bite.

Each muffin, as prepared, contains just under 200 calories. If you’re mindful of your calorie intake, you can reduce this to approximately 150 calories per muffin by simply halving the amount of chocolate chips used. These treats are intentionally loaded with chocolate chips to maximize flavor and indulgence, which is undoubtedly part of their charm. However, feel free to customize the chocolate content to suit your dietary preferences – choose your own adventure in chocolate!
