Instructions

  3. Arrange the tofu on a rimmed baking sheet and spoon the marinade over the pieces, turning gently to coat. Cover and refrigerate at least 1 hour, or up to 24 hours for more flavor.
  4. Position an oven rack about 6 inches from the broiler and preheat the broiler. Line a rimmed baking sheet with aluminum foil and arrange the tofu in a single layer with space between pieces. Broil until the first side is deeply browned, about 7–10 minutes, rotating the sheet halfway through. Flip carefully and broil the second side until browned and caramelized, about 5–7 minutes more. Watch closely to avoid burning; the goal is very dark edges for crispness.
  5. While the tofu broils, blend the mayonnaise (or Vegenaise), lime juice, water, cilantro, and salt until mostly smooth and pourable.
  6. Divide the tofu among warm pitas. Top with chopped tomato, herbs, and pickled red onion, then drizzle with cilantro sauce and serve immediately.
