  • ¼ teaspoon crushed red pepper
  • ½ cup jarred roasted red pepper slices
  • ½ cup shredded mozzarella
  • ¼ cup pesto

Instructions

  3. Sprinkle with salt and let sit for 5 minutes, then pat dry with a paper towel. This step helps draw out moisture and bitterness, ensuring perfectly cooked eggplant.
  4. Brush the naan with 1 tablespoon of olive oil. This will help them crisp up beautifully on the grill.
  5. Grill the naan for 1 minute on each side, just until lightly golden and slightly crispy.
  6. Brush the eggplant slices with the remaining 1 tablespoon of olive oil. Grill the eggplant slices for 4-5 minutes per side, or until they are tender and show nice grill marks.
