  • 12 ounces small Yukon gold or red potatoes (about 1 to 2 inches across), quartered

  • 1/2 teaspoon salt, divided
  • 1/4 teaspoon freshly ground pepper, divided
  • 1 medium zucchini (about 8 ounces), cut into 1/2″ thick half moons
  • 8 ounces cherry tomatoes
  • 1 (15-ounce) can lentils, rinsed and drained well
  • 4 ounces feta cheese, crumbled (about 1 cup)

For the dressing:

  • 1/4 cup mayonnaise (or a plant-based mayo)
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 450°F and position a rack in the upper-middle of the oven.
  2. Toss the quartered potatoes with 1 tablespoon of olive oil, the cumin, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Arrange the potatoes cut-side down on a rimmed baking sheet, cover tightly with foil, and roast for 18–22 minutes, until they are almost tender and beginning to brown on the underside.

  5. Return the pan to the oven and roast for another 15–18 minutes, until the tomatoes blister and release their juices, the zucchini is tender, and the feta softens and develops lightly browned spots.
  6. While the sheet pan finishes roasting, whisk together the mayonnaise, chopped parsley, lemon juice, and 1/4 teaspoon salt to make the dressing.
  7. Once the vegetables are done, let the pan rest for about 5 minutes, then drizzle with the parsley dressing or serve it on the side. Serve warm.
